Wasabi is a member of the cruciferous family of vegetables, which are particularly rich in compounds called glucosinolates, precursors of another compound known as an ITC. When glucosinolates, which normally remain separated from other compounds in the cell, merge with a key enzyme after the plant's cell wall is broken through processing or chewing, ITC's are created, which give wasabi its numerous health benefits.
